Maritime “Martini”
Serves 10
Ingredients
30 large Digby scallops
½ cup red pepper, chopped
½ cup yellow pepper, chopped
3 green onions, chopped
10 sprigs of parsley
¼ cup gin
¼ cup vodka
½ cup fresh lime juice
4 tsp chillies, chopped
3 tbsp olive oil
Salt to taste
Pepper, ground, to taste
To Prepare
1. In a large bowl combine the vodka, gin, lime juice, chillies, peppers and green onions.
2. Heat oil in a skillet over high heat, season scallops with salt and pepper, add scallops to pan and sear 1 minute per side. Remove scallops from pan and let cool.
3. Mix scallops with vodka and gin mixture and marinate for 2 to 3 hours in the refrigerator.
4. To serve, place 3 scallops in a martini glass or on a small plate, spoon some of the marinade over the top and garnish with a parsley sprig.
